At Charcoal, chefs meet the artists | Arts & Appetite

Charcoal has created a menu and atmosphere that reflects a love of quality and creative food. Pictured appetizers: Brussels Caesar, with a bit of pork belly, and pickled vegetable.

After visiting Charcoal, the new restaurant in downtown Edmonds tucked inside the Graphite Arts Center, I planned to title this review "Food as Art."

However, when I asked Mary Olsen, who developed the concept of the center with friend and artist Tracy Felix, Olsen shared that she sees beauty in the collaborative inspiration, or as she said it: "Chefs meet artists."

Chef de cuisine Seth Prigg actually created concept drawings of several items on the menu to show the layers of flavor and color in a dish, as depicted by his charming drawing of the Pacific Oysters Rockefeller. Most restaurant...

Thanks for the great review of this new restaurant. I'm curious if the cow statute is still outside the restaurant doors and if so, what is the meaning of the cow?
