Edmonds home baker taking her talents to Scotland (but first stop: ChurchKey)

Posted

An Edmonds home baker is heading to Scotland to compete for a world shortbread title. But first, she's inviting her hometown to help put her recipe to the test.

Jennifer Tripp, founder of Haven + Crumb Shortbread, sold out at her very first event – and even won over a skeptical Australian shortbread connoisseur who called it the best they'd ever tasted. With Scottish roots and fond childhood memories of shortbread, she's taking her distinctive version to the inaugural World Shortbread Championships in Inverness on Nov. 21.

Before that, however, ChurchKey Pub on Fourth Avenue North will host a tasting where guests can sample Jennifer's shortbread, vote for their favorites, and help refine her championship entry.

It’s Wednesday, Oct. 21, from 6–8 p.m.

Then comes the challenge of getting 1,050 delicate shortbread samples across the Atlantic, intact and competition-ready. In Scotland, her entries will face blind judging by a panel that includes Nicky Laceby from “The Great British Bake Off,” while public tasters will also help determine the winners.

Beyond the competition, Tripp is building Haven + Crumb as an Edmonds cottage bakery, sharing her shortbread through local events and creating premium gifts for the holiday season.

She has a pop-up scheduled for this Saturday at Dusted Valley in Edmonds from 3-7 p.m.  More info on her website and Instagram channel.

She said there are no plans for a brick-and-mortar location, but will be selling limited edition holiday tins full of her buttery shortbread at the upcoming Edmonds Museum’s Holiday Market, which begins Nov. 7.
