Charcoal has created a menu and atmosphere that reflects a love of quality and creative food. Pictured appetizers: Brussels Caesar, with a bit of pork belly, and pickled vegetable.

After visiting Charcoal, the new restaurant in downtown Edmonds tucked inside the Graphite Arts Center, I planned to title this review "Food as Art."
