Herb Potato Salad | Let's Cook!

This is a perfect side dish to complement any entrée, and a great healthy alternative to the classic potato salad. Serves 4.
1 pound small white or yellow potatoes, unpeeled
1 tablespoon olive oil
1 teaspoon smoked paprika (optional)
¼ teaspoon salt
Fresh Herb Sauce Ingredients:
½ cup fresh parsley, chopped
½ cup green onions, sliced
1 clove garlic, minced
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon water
1 teaspoon lemon juice
