Roasted Vegetable Chili with Cornbread Biscuits | Let's Cook!

I came across this recipe a few years ago. When we had a big snowstorm here a couple years back, I remembered this recipe and decided to give it a try as it sounded like the perfect meal for such a time. I am always looking for new and different vegetarian recipes, and this one really stood out because of the unique method with which the chili is made.

Mostly, I think I may have been intrigued by making it all on a sheet pan. It turned out to be really delicious and everyone really enjoyed it. It also keeps and reheats very nicely. I deviated a little from the original recipe, adding more...
