Niles Peacock Kitchen & Bar could open next month

NIles Peacock at his under-construction pizza and cocktail restaurant at Salish Crossing in Edmonds. He hopes to open in March.

It was always Niles Peacock's intent to return to Edmonds. The coronavirus pandemic simply sped up the process.

The former bartender at the now-closed 190 Sunset restaurant at Salish Crossing (it now houses Epulo) hopes to open Niles Peacock Kitchen & Bar in March. He calls it a full-service pizza restaurant and cocktail bar in the space formerly housing Evviva Wood-Fired Pizza, itself at Salish Crossing.

After leaving 190 Sunset, he opened a restaurant on Stone Way North in Wallingford – Niles Peacock Kitchen & Bar.
