Mexican mole done right in Lynnwood

Mexican mole, seen here with a quesadilla, was created for an archbishop and perfected in Lynnwood.

Mexican mole is one of those regional specialties so unique that most of us remember the first time we tried it, and if we are lucky, where we have found it in the U.S.

Our family has traveled extensively in Mexico, so I have many fond memories enjoying this complex dish. Now, thanks to Taqueria Puebla in Lynnwood, I am creating new culinary memories right here at home.

Moles are native to Puebla and Oaxaca, but the history of the dish can be traced back at least several hundred years. As the story goes, the archbishop was visiting the Convent of Santa Clara in Puebla, and the nuns did not...
